Directions

Sauté the onion, carrot and the celery in the butter until very soft.

Add the ham hock and cook about fifteen minutes.

Add enough water to cover the meat . Bring to a boil. Reduce heat

Cover and simmer until the meat is very tender and falls off the bones

Remove the bones and hard tissue. Add the beans and potatoes and simmer until firm tender.
